New Restaurant Openings
Tequilería Alteño
Chef Johnny Curiel has introduced Tequilería Alteño, a pop-up dining concept located in the former Mar Bella Wine Bar space inside the Clayton Hotel & Members Club in Cherry Creek. The menu features 11 standout small plates, including the chef-recommended chamorro (pork shank), complemented by creative drinks like the charro negro and mole blanco negroni. The venue operates Tuesday through Thursday from 4–10 pm and Friday through Saturday from 4 pm to midnight, emphasizing bold flavors in a cozy setting.
Mother Other
Chef Alexi Mandolini and her partner Taylor Herbert, known for The Easy Vegan, have launched their first permanent restaurant, Mother Other, in the Baker neighborhood at 675 S. Broadway, Suite 300. Designed as an inclusive space for queer communities and chosen families, this vegan bar and restaurant offers a welcoming neighborhood gathering spot. Remarkably, Mandolini and Herbert undertook much of the restaurant’s construction work themselves with the help of friends and family.
Uchiko
Scheduled to open in February 2026, Uchiko is the latest venture from James Beard Award-winning chef Tyson Cole. Located at 299 Fillmore Street in Cherry Creek North, the restaurant will occupy a reimagined 7,400-square-foot space, including a 2,300-square-foot sunroom. Uchiko promises a fire-centric Japanese dining experience with multiple environments, including an intimate bar, a 14-seat sushi bar, and a private dining room with a stone fireplace.
Food Truck Favorites
Farm to Truck
Embracing Denver’s farm-to-table concept, Farm to Truck offers locally sourced comfort dishes from around the world. The menu includes a Colorado lamb burger topped with fried onions, goat cheese, and mint aioli, as well as a vegetarian hemp seed wrap filled with fresh local produce. Sides like pork belly and yellow curry potato salads complement the main offerings. Real-time location updates are available on their social media accounts and website.
Mike’s Coney
Bringing a taste of Michigan to Denver, Mike’s Coney serves Flint and Detroit-style hot dogs loaded with chili, mustard, and chopped onions. Ingredients are sourced directly from Michigan to ensure authentic flavor. The iconic 1950s sign adds a nostalgic touch, making it a popular spot for a quick lunch or dinner. Upcoming locations include Max Taps Highlands Ranch and Grossenbart Brewery in Longmont.
The Ethiopian Food Truck
As Colorado’s first and only Ethiopian food truck, The Ethiopian Food Truck offers authentic dishes like chicken and beef tibs made to order. Vegetarian-friendly options include a veggie combination with red lentils, yellow split peas, spiced spinach and potatoes, and curried cabbage with carrots. The truck is a popular addition to Denver festivals such as Civic Center Eats and The Denver International Festival.
Denver’s culinary landscape is ever-evolving, with new establishments and food trucks continually enriching the city’s diverse food culture. Whether you’re a local or a visitor, these new openings and mobile eateries offer a taste of the innovative and inclusive spirit that defines Denver’s dining scene.
